Brisket In Tomato Suace With Pasta

Looking for ideas that use any left over brisket?  This is a quick and tasty dish that will make great use of left over brisket.

Ingredients

  • Brisket
  • Wholemeal pasta
  • Tomato pesto
  • Chopped tomatoes 
  • Salsa  
  • Pomegranate juice
  • Peas
  • Parsnip 
  • Olives
  • Coriander
  • Balsamic vinegar
  • Garlic glove 

Method

Cut the left over brisket and parsnip into bite size pieces.  Chop up the garlic and put everything except the pasta and coriander in a saucepan.  Cook on a low heat while the pasta is boiling.  When the pasta is cooked, add it to the brisket and tomato sauce. Chop the coriander and stir into the mixture then serve.
